Looking to fix and forget water issues

Hi, I'm having some water pressure issues that I think some component replacement and a CSV can fix for good.
Particulars are not knowing the pump data for one, original to the house, controller is for a 115V 1/3 hp pump however.
Pressure tank is in crawlspace but I installed a remote pressure guage in the garage by the contoller so I dont have to crawl around on my hands and knees to check it.
Pressure gauge will drop to 20 before it turns on but then rises to 80, then vibates or something like that and drops to 60 fairly quickly then to 80 and clicks off, then another slow decent to 20 psi.
Im fairly confident the pressure switch is faulty.  Now to rework this system, We have terrible water, I have replaced 3 water heaters that have rotted out in the 12 years I have been here.  Lots of iron and sulphur.  I have recently installed a whole house instant heater so no more tank to rot.  This leaves me with a nice vacant area open to move the pressure tank up into the garage with the rest of the water softening equipment.  House has 3 bathrooms so off your chart we need 14 gpm correct?  Without pulling pump how can I tell if the pump will supply the house with the needed pressure and gpm?  Can I simply time the fill of a 5 gall bucket from a hydrant and extrapolate the data?  How do you determine what pressure the pump will build?  The pump is a Goulds submersible according to the unfilled out data sticker attached to the controller box... >:(  I would love to be able to have close to 60 psi of steady pressure without a large tank.

That is not a very large pump, but still maybe ok.  First thing I would do is check the 1/4" nipple that the pressure switch is screwed onto.  it sounds like the nipple is clogged, which is why you pressure sometimes goes down to 20 or up to 80 when it should be working between 40 and 60.
